Chili Chocolate Brownies

 

Ingredients:

 

6 oz. good quality dark chocolate ( I use Poulain)

½ cup butter

1 ½ cups sugar (I honestly halved that amount and it worked just as well)

4 large eggs

1 tsp vanilla extract

2 tbs cocoa powder

½ tsp crushed red chili flakes

½ tsp cayenne pepper

2/3 cup flour

¼ tsp salt

 

Directions:

 

Preheat the oven to 350 C/ 176 F. Line a baking pan with baking paper (leaving extra going up the sides). I like to use a tin pan, but if all you have is pyrex that is fine as well.  Over a double boiler of simmering water , place the chocolate and butter and stir until melted and smooth. Whisk eggs and sugar together, until the sugar has dissolved. Add the cocoa powder, chili flakes and cayenne and whisk until smooth.  Once the melted chocolate has cooled, gradually whisk into the egg/sugar mixture.  Whisk together flour and salt and fold into the liquid mixture until just combined. Bake for approximately 35 minutes or until a toothpick inserted comes out clean. My kids like their brownies extra chewy and soft, if that is your case remove a few minutes early.
